What’s the point of a glass of milk if it’s not paired with a peanut butter cookie? This recipe is super simple but packed with flavor, and it’s virtually impossible to mess up.

Preparation
1. In a medium mixing bowl, combine the butter, peanut butter and sugars. Beat until smooth.
2. Add the egg and vanilla, and beat again until smooth.
3. In a smaller mixing bowl, whisk together the flour, baking soda, baking powder and salt.
4. Mix the dry ingredients into the wet, and fold until fully combined.
5. Cover the dough with plastic wrap, and refrigerate for 2-3 hours or overnight.
6. Preheat the oven to 350 F.
7. Line a baking sheet with parchment paper. Roll balls of dough (about 1-2 tablespoons each) and lay them on the baking sheet.
8. Press the balls down twice with a fork, vertically and horizontally. This will make that classic peanut butter cookie pattern.
9. Bake the cookies for 10-15 minutes, or until crisp around the edges and still slightly soft in the center. Allow to cool 1-2 minutes on the baking sheet before transferring to a wire rack to cool completely.
