Bob’s Thin Cherry Chocolate Chip Cookies

I got this recipe from my buddy Bob Capper. What's not to like? Cherries and Chocolate Chips! Yum!

Preparation
1. Preheat the oven to 350°F. Line baking sheets with parchment paper.

2. In a medium bowl, whisk together:

3. 169g flour

4. 2.5ml (1/2 tsp.) baking soda, and

5. 2.5m! (1/2 tsp.) salt

6. In a large bowl whip until smooth with a hand or electric mixer:

7. 125g clarified butter, oil, or preferred blend

8. 15ml (1 tbsp.) corn syrup

9. 15ml (1 tbsp.) lecithin

10. 1 egg

11. 15ml (1 tbsp.) milk, water, or yogurt juice

12. 10ml (2 tsp.) 2 tsp. vanilla

13. 5ml (1 tsp.) cherry flavoring

14. When thoroughly blended add sugar and whip until uniform: • 110g granulated sugar

15. 60g brown sugar

16. Gradually add the flour mixture and stir until just combined, being careful not to over-mix.

17. Gently fold in up to 250ml (1 cup) dark chocolate chips

18. (70%) to suit.

19. Using a 1 tbsp. cookie scoop drop dough at least 2 1/2 inches apart (3x4 on a 12” x 16” sheet).

20. Bake 8 minutes or until golden brown, taking care as they darken fast toward the end.

21. Cool on the baking sheets for 5 minutes before using a thin spatula to remove to wire racks.
