Preparation
1. In a large bowl, combine the first 6 ingredients.
2. In a small bowl, beat the egg whites, bananas, brown sugar, milk and oil. Stir into dry ingredients just until moistened. Stir in walnuts.
3. Coat muffin cups with cooking spray; (or use paper cupcake liners) fill two-thirds full with batter.
4. Bake at 400° for 15-20 minutes or until a toothpick comes out clean.
5. Cool for 5 minutes before removing from pan to a wire rack.
